Ingredients

 

2kg Skaapstertjies, defrosted and trimmed of excess fat

2 Onions, peeled and roughly chopped

3 Cloves

2g Coriander Seeds

1 lit Beef Stock

100ml Tomato Sauce

100ml Worcestershire Sauce

100ml White Wine

 

Method

 

Place the onions at the bottom of a braising tray and top with the Skaapstertjies

Combine the rest of the ingredients and cover the Skaapstertjies with the liquid

Cover the tray with foil and place in a pre heated oven on 180°C for 45min, turning the Skaapstertjies every 18min

Once soft and almost falling off the bone, remove from the oven and let cool, remove the tails from the liquid, place in a drip tray so the fat drains off

In a smoking hot pan, sear the cooked tails on either side until golden brown

Squeeze over fresh lemon juice and sprinkle with Maldon salt
